"Cut Out the Middleman!"

Earth Day Reflection

By Novice Francis Nguyen

One thing that I have done for the care of creation is eating a more plant-based diet. For me, this was initially just a concern of health. Yet as I looked more into the vegan diet, I found that having a plant-based diet leads to a healthier planet. In terms of a diet based more on meats, much more water has to be used to plant and grow vegetables to feed the animals than if we ate the vegetables ourselves. Cut out the middleman! I recognize that taking care of my health is good not only for me, but good for the earth, too. This shows how we as humans are so much more united to our earth than we think. It has also surely impacted the way I think about my health, how that will affect me in my ministry, and what that really means for the whole world. Moreover, it affects all the food waste that occurs every day and all the clean water that could be granted to those who do not have it.
